At Munich's oldest winery, too.The chefs at Weinhaus Neuner -- Andreas Feuerstein and Nino Esposito (in picture) have been running this famous old restaurant for 10 years. And meals have already been served here 500 years ago with the establishment still displaying the original arches and vaults. Saddle of Rabbit on Chanterelle-Leek Fondue with Pasta Ingredients: 4 pieces boned saddle of rabbit 10 sticks young leeks 250 g fresh chanterelle mushrooms 700 ml mushroom stock 200 g pasta strips 100 g whipped cream 100 g butter small bunch of chives small bunch parsley 100 ml prosecco 1 tablespoon cornstarch 200 ml red wine sauce Preparation: Season the saddle of rabbit, dust with flour and fry in oil over a gentle heat, finish in the pan under the grill. Fry the chanterelles in butter in a small pan, add the sliced leeks, season and add the mushroom stock. Reduce the liquid by two-thirds, bind with cornstarch, add the butter and stir well. Finally, add the herbs, the prosecco and whipped cream. Bring to the boil, taste and season if necessary, then add the pasta. Put the chanterelle-leek mixture in a deep bowl, arrange the rabbit pieces on top and serve with red wine sauce.

This recipe comes to us from Landersdorfer & Innerhofer in Munich. Venison with Sautéed Porcini and Artichoke Ingredients: about 800 g loin of venison, de-boned and trimmed juniper berries 4 artichokes, cleaned, boiled, and cut into medium-sized pieces 500 g porcini, cleaned and sliced salt, pepper, chopped parsley to taste butter and olive oil for sautéing Preheat the oven to 180° Celsius. Season the loin of venison with salt and pepper. Briefly sauté on both sides and then add the juniper berries. Place the pan with the loin of venison in the oven for about 8 to 10 minutes, depending on the thickness of the cut of meat. Remove the pan, place the venison on a plate, cover with aluminum foil, and allow to rest for about 10 minutes. Meanwhile heat a small amount of olive oil in a pan. Add the artichokes and sauté. Season with salt and pepper. After about 5 minutes, add the porcini mushrooms, stir well, and continue to sauté until lightly crispy. Add some chopped parsley and butter to taste. Stir briefly and serve. Carve the venison into thin slices and serve on top of the sautéed vegetables, topped with sauce of veal or wild game.

Shrimps with clams Ingredients: 250g shrimps 150g clams Garlic White wine 1 lemon Parsley Preparation time: approx. five minutes Preparation: Add shrimps, clams and chopped garlic to a pan with hot olive oil and fry over a medium heat After a few minutes, when the clams have opened, add a little white wine and simmer briefly Arrange on plate Garnish with a dash of lemon juice and some chopped parsley Remember: Only use medium heat; the seafood has to retain its juice!

Today's recipe comes from the Italian region of Piedmont and the restaurant L´Ostu dij Baloss in Saluzzo. RECIPE for 4 people: 300 g. porcinni mushrooms 1 large potato 1 onion 150 g. ricotta cheese ½ glass Marsala (Italian dessert wine) a few sprigs of parsley 1 bouquet garni (see preparation below) salt and pepper to taste olive oil 1 liter vegetable stock from carotts, onion and celery and a pinch of salt Bouquet Garni: Wrap sprigs of thyme, sage and rosemary in a bay leaf. Insert into a garlic clove. Mushroom creme with Ricotta Mousse: First finely chop vegetables. Then heat olive oil and sauté onions and bouquet garni for two minutes. Add most of the mushrooms and the finely chopped potatoes then sauté for an additional three to four minutes. Add salt and pepper to taste, add marsala wine, stir a few times. Add vegetable stock and allow to simmer on medium heat for an additional 20 minutes, stirring occasionally. Purée everything. Briefly sauté remaining mushrooms in frying pan. Use two spoons to form ricotta bowl, add soup. Garnish with sauteed mushrooms and parsley. Enjoy!
